Ilonggo Laswa Recipe – Poor Man’s Version

This is a simplified version of the classic Ilongga Laswa Recipe.  This clean and delicious vegetable dish would only cost about 5 peso per serving.

Other Ilonggo laswa recipe would have plenty of vegetables.  Some would add shrimp or fish.  It’s a popular dish among Ilonggos in Negros and Panay.

This laswa recipe has only three main ingredients that are essential to making laswa.  This would usually cost 20 pesos only and would be able to serve 3-4 persons.  Thus, it’s only about 5 pesos per serving.  We would cook this Poor Man’s Laswa Recipe almost every week.  Gab even likes it especially the soup.

Ilonggo Laswa Recipe

Laswa can be a side dish.  But for us Ilonggos, it’s as good as the main dish.  Fish goes well with laswa.  The saltiness of the fish adds flavor for every spoon.

Here’s the Poor Man’s Laswa Recipe Version

Poor Man’s Laswa Recipe – Vegetarian

Ingredients

1 cup Saluyot
5 pcs Okra (large)
1 cup Kalabasa (sliced)
salt or fish cubes
1 liter water

Procedure

1.  Boil the water in a cooking pot.
2.  Add the okra and kalabasa.  Simmer for 3-5 minutes or until the kalabasa is soft.
3.  Lower the heat and add the saluyot.  Simmer for 1-2 minutes.  (Or you can turn off the heat and let it settle for 3-5 minutes before serving.)
4.  Add salt or fish cubes according to taste.

DADDY TIPS

1. To make the best tasting laswa, make sure that the vegetables are fresh.
2. Laswa goes well with fried fish, dried fish or canned Spanish style sardines or tuna.
3. You can add other vegetables like string beans, eggplant, and spinach.
