Malunggay Pesto Pasta Sauce Recipe

This is Gab’s favorite pasta. He is not a fan of red tomato-base sauce but prefers the green pesto sauce instead.  So from time to time, I make him some homemade fresh pesto.

This recipe has malunggay or moringa on it. This makes the pesto healthier and perfect for my growing boy.  The recipe came from yummy.ph and from my friend Mike.

Malunggay Pesto with French Bread

Malunggay Pesto Pasta Recipe

Ingredients 

  • 1/2 cup malunggay leaves
  • 1/2 cup fresh basil leaves
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoon roasted cashew nuts
  • 4 cloves garlic
  • 1/2 cup extra virgin olive oil
  • 250 grams cooked pasta
  • salt and pepper to taste

Procedure

1. Combine the malunggay leaves, basil leaves, Parmesan Cheese, cashew nuts, garlic and olive oil into a blender or food processor.
2. Season with salt and pepper.
3. Mix and serve with cooked pasta.

It’s that simple and fast.

Daddy Tips

1. Use fresh malunggay leaves and basil leaves for a more flavorful pesto.
2. Pour the olive oil little by little if you wish to have a desired consistency.
3. You can also use butter instead of salt to add flavor to the sauce.
4. You can omit the Parmesan cheese and add more nuts instead.
5. This is also great as a dip or spread for bread.
