Vegetable Samosa Recipe

A Samosa is an fried Indian snack food.  I love to order it whenever I dine in Indian or Asian restaurants.  I finally found a recipe that I can cook at home.  This Vegetable Samosa Recipe has few ingredients and are easy to find.

This is a good way for kids to eat vegetable since the vegetables are hidden.  Samosa would usually contain potatoes and cilantro. To make it healthier for kids, I would add a few carrot bits and malunggay leaves (moringa).  They wouldn’t even know it is there.  Yet they would love the crunchy texture and the yummy filling.

We tried it with Gab and he absolutely loves this Vegetable Samosa Recipe.  He loves crunchy food and this is an instant hit.  Try it in your homes too.

Vegetable Samosa Recipe

Ingredients

  • 4 pcs medium-sized potatoes, chopped into small cubes
  • 1 can peas or garbanzos
  • 1/4 cup chopped fresh cilantro
  • 2 onions, minced
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • salt and pepper to taste
  • spring roll wrapper sheets
  • olive oil or cooking oil

Optional:

  • 1/4 cup malunggay leaves
  • 1 pc carrot, chopped into small cubes

Procedure

  1. Pre-cook the potatoes in boiling water for 5 minutes or until soft.
  2. Sautee the onions in a bit of oil until they are soft, about 6 to 8 minutes.
  3. Add the cumin and cayenne, and cook for another minute.
  4. Complete the samosa filling by adding the potatoes, peas and cilantro, stirring to mix well. Season with a bit of salt and pepper.
  5. Remove the filling from heat.
  6. Place 2-3 tablespoons of the samosa filling on the spring roll wrapper sheets.  Wrap the samosa filling from the corner and going towards the center to create the triangular shaped wrapper.
  7. Fry the spring roll wrapper sheets until golden brown.
  8. Serve.

Daddy Tips

  • If you are adding the carrot, cook them with the potatoes.
  • Make sure the samosa filling is not wet or too oily when placing them into the spring roll wrapper sheets.
  • Square-shaped spring roll wrappers are better in making the triangular shaped compared to the circular-shaped lumpia wrappers.
